  • 8oz (240ml) cold water or sparkling water
  • Ice

  7. 7Stir and enjoy.

This is the drink that converts people who think they don't like matcha. The lemon's acidity cuts through any bitterness, the sweetener rounds everything out, and the matcha delivers its signature clean energy without the heaviness of milk.

Use Ceremonial Matcha here — since there's no milk to mask flavor, you want the smoothest, least bitter matcha you can get.

Tips

  • Sparkling water makes this feel like a cocktail (in the best way)
  • Adjust sweetness to your preference — start with 1 tsp honey and go from there
  • Add fresh mint leaves for an extra layer of freshness
  • Use Meyer lemons for a sweeter, more floral citrus note

Why It Works

The acidity of lemon actually enhances matcha's green color and brings out the sweeter notes. This is a chemistry thing — the pH shift makes the chlorophyll more vivid. So beyond tasting great, this drink looks absolutely stunning.
